Riesling (100%), TUMBARUMBA
Season
The 2021/2022 growing season commenced with good spring rains, giving way to a temperate summer, interspersed with rainfall events. A drier early autumn period facilitated the steady development of botrytis cinerea (noble rot) on many of the riesling berries through March and April.
Viticulture
Riesling is grown on deep weathered granite at around 630m altitude at Tumbarumba. Vines are vertically shoot-positioned on north-south rows, planted on a north-westerly aspect.
Winemaking
The grapes were harvested by hand on the 13th April 2022. Whole-bunch pressed oxidatively and slowly, the racked juice was inoculated with a neutral yeast strain and fermented at 17 deg Celsius, before cooling and stopping the ferment at 64g/L residual sugar. Clarification and bottling took place in June 2022.
Taste
Aromas of heady white flowers, grapefruit and candied citrus precede a moderately sweet palate cut by lime. Suited to lengthy cellaring, the Golden Mean’s gently sweet and racy palate is best paired with desserts that are not too sweet – a mild panna cotta or basque cheesecake.
